CULINARY COMMUNITY
One of the most promising trends is the rapid
emergence of movements among both chefs and consumers to strengthen
bonds with local producers. Celebrity chefs such as Alice
Waters of Chez Panisse in Berkeley led the way, and now local
organizations are carrying on this work in local communities.

FORKS, which stands for "Fields, Oceans,
Ranches, Kitchens & Stewards," is the Seattle chapter of Chefs
Collaborative, a nationwide network of restaurateurs supporting
sustainable agriculture and fisheries. Their aim is to serve as
a link between producers and chefs throughout the Seattle area.

The introduction of the international Slow
Food movement to the Pacific Northwest was heralded by Seattle
Weekly editor Roger Downey in Save
the World: Eat!, published in early August, 2001. The first
Seattle "convivium," as local chapters are called, formed
soon thereafter, and since then local convivia have sprouted throughout
the region like mushrooms after an autumn rain. The Puget Sound
group has taken the lead in participating in Slow Food's Ark
of Taste to celebrate and preserve threatened regional foods.
